There have always been a battle of the best Jollof Rice between Nigeria Jollof and Ghana Jollof but I have not come across any one about Nigeria Jollof spaghetti versus Ghana Jollof spaghetti. Well, maybe it would become a trend someday.
Our focus today is on Jollof spaghetti which is prepared almost the same way as Jollof Rice where you mix your spag in tomato, onion and other ingredients. Spaghetti is one of the member of the pasta family and it happens to be my favorite either it is prepared as Jollof or prepared with sauce. It is a win-win for me either ways.
This recipe is actually a simple one. There are no super extra ingredients used. The major ingredient that I used is the sausage. Other ingredients are quite necessary such as the tomatoes, onions, pepper, vegetables, etc. There are other ingredients that you can use in order to make a more mouth-watering meal such as prawns, chicken, snails, etc.
INGREDIENTS
- Spaghetti
- Red peppers
- Tomatoes
- Onions
- Carrots
- Green peas
- Vegetable oil
- Sausage
- Spices
- Eggs
HOW TO PREPARE
Wash the red pepper, tomatoes and onions thoroughly, slice into smaller sizes and set aside
Wash the carrots and green peas. Chop into desired sizes and set aside
Place a pot on medium heat with some water. When the water is hot add your spaghetti and allow to parboil for some minutes
Pour it out into a sieve and set aside while you start preparing the sauce base
Place the pot back on medium heat, add vegetable oil, the sliced pepper, onions and tomatoes, sausage. Add stock cubes and other spices. Allow to fry for some minutes
Add some water to the pot then add the spaghetti that you've set aside earlier.
Cover the pot and leave to cook for some minutes
Then add the diced carrots, green peas into the pot
Some people may prefer to stir fry the carrots and green peas with the pepper, tomatoes and onions or separately but for me I prefer to go for this method today.
Reduce the heat, and cover the pot so that it will simmer and the water will dry
Check if the salt and other spices are adequate. Add more if necessary
Stir and serve.
