My kimchi making

it brings me so much joy to make napa kimchi! QUESTION ~ do you cover your kimchi either with a little extra water with the remains of the stuffing and/ or cover with a napa leaf? I know the kimchi shouldn’t have too much air and have been told a few different things. FYI I am a Korean adoptee so I don’t have an Umma to ask!! 😊
