This is a popular drink from the northern region of Nigeria. It is traditionally known as Kunun which is in different varieties such as Kunun Geda, Kunun Aya, Kunun Zaki etc. Kindly follow me as i briefly describe how Kunu zaki is been prepared.
Recipe & Ingredients: Millet, Guinea corn, Dry sweet potato, Germinated Rice seedlings, Ginger, black pepper (masoro), cloves, Sugar,
PROCEDURES
- Mix millet and guinea corn and soak over night in water
- Wash thoroughly to extract sand from the mixture
- Pound your dry sweet potato with fresh or dry ginger, cloves, black pepper and add to to your mixed millet.
- Put the ginger and dried sweet potato in a bow for further grinding first
- Extract the soaked millet and put into a separate bow and grind
- Boil your hot water
- Mix the grounded millet with water to thicken in a big bow
- Then pour the hot water in the bow in 8 above and stir to thicken it.
- Then pour the grounded sweet potato and ginger, stir and live it to cool after 3 hours. Do not stir again as it might go soar when stirred. Just leave it there and add a wood charcoal to haste the separation process
- After been cooled, seeve to remove the chaffs and add your sugar to your filtrate.
Here you go, then your millet drink is ready for consumption
