Ingredients
1 medium cabbage
2 large carrots
1 large paprika
3 sweet peppers
150g of assorted branches: Parsley, leek, cilantro, or parsley.
½ cup of sunflower or soybean oil.
1 teaspoon salt.
1 teaspoon ground oregano powder
1 cup of water
Preparation
1- Wash our vegetables and greens very well before starting, that is a rule that we must always follow. Cut the cabbage, the sweet pepper, and the head onion into julienne strips and the carrots and paprika into sticks. We are going to cut the branches into small pieces to make mincemeat.
2- Once we have cut our vegetables, we are going to place a large frying pan or wok on the stove over medium-high heat that will serve us to make our delicious recipe, in this we add the ½ cup of oil and wait for it to heat up, then we first fry our green branches in mincemeat.
3- Once we have our sauce, we add the paprika, sweet pepper, and head onion previously cut into sticks and stir until they are well integrated into the sauce.
It is at this moment when we add the teaspoon of salt and oregano (remembering that whoever wants it more seasoned can add more salt, I like balanced flavors and that the condiments serve to enhance the flavor of the vegetables but not overshadow them) add and stir with our spoon or palette.
4-. When our vegetables are sautéed (sofrito), we know this because the onion changes from its white color to almost transparent, and the texture of the paprika becomes soft, it is time to incorporate our carrot sticks and sauté.
5- When we have already sautéed our carrot sticks and integrated them well, it is time to add the cabbage.
6- After we have mixed everything well we are going to add our cup of water and we are going to cook covered for 20 minutes, in that time the flavors finish integrating and the cabbage will take on a soft and delicate texture, the flavors will have been integrated and our recipe will be ready.
One recommendation is to uncover from time to time and stir.
And ready. After 20 minutes we will have a stewed cabbage in perfect harmony with the vegetables that we add, this dish can be eaten alone or accompanied, it is ideal to serve with an integral piece of toast, soda, or fiber crackers.
