Lamb chops are definitely one of my all time favourites! I used to fry them but haven't done that in years. These days, I just stick them straight under the grill at 250 degrees Celsius for 5 minutes on one side, then flip them all on their sides - fat side up, turn the oven down to 50 and leave them for about ten minutes. They crisp up beautifully yet are still amazingly juicy, tender and pink on the inside.
Seasoning for lamb chops is best kept simple in my opinion - Just a crack of salt, pepper and then a handful of freshly chopped herbs - whatever takes your fancy!
