আমাদের দেশের প্রায় সবাই কোনো না কোনো ধরনের সবজি পছন্দ করেন। সবার প্রতিদিনের খাবার তালিকায় সবজি থাকে। দ্রুত বাড়ে এমন সবজি চাষাবাদ করতে আগ্রহী। আমাদের দেশে পুরো বছর বিভিন্ন ধরনের সবজি চাষ হয়। শীতকালেই সবচেয়ে বেশি সবজি পাওয়া যায়। শীতকালে যত ধরনের সবজি পাওয়া যায়, তা বছরের অন্য কোনো সময় পাওয়া যায় না। এ সবজিগুলোর পুষ্টিগুণ বলেও শেষ করা যাবে না।
শীতকালে নানা ধরনের সবজির বাণিজ্যিক চাষ যেমন হয়, তেমনি শৌখিন চাষি যারা ছাদে এবং নিজেদের আঙ্গিনায় সবজি চাষ করেন, তাদের জন্যও এই সময়টা সবচেয়ে উপযোগী। শীতকালীন সবজির মধ্যে শিম, বাঁধাকপি, ফুলকপি, গাজর, মটরশুঁটি, মুলা, পালংশাক, ওলকপি, লালশাক, লাউশাক, করলা, বেগুন, টমেটো, বরবটি, আলু।
জানা যাক এমন কিছু পরিচিত সবজির কথা, যেগুলো থেকে আসছে শীতে দ্রুত ফসল পেতে পারেন। যারা শৌখিন চাষি তারা তাদের ছাদে, বারান্দায় টব, ড্রাম, অব্যবহৃত প্লাস্টিক কৌটা, পানির বোতলে এ সবজি চাষ করতে পারেন।
মুলা: মুলা লেটুসের সারির মাঝখানে লাগাতে পারেন। এতে অল্প জায়গায়ই দুটি ফসল পেতে পারেন। মাটির .৫ ইঞ্চি নিচে মুলার বীজ লাগান। বীজ বপনের আগেই মাটিতে সেচ দিন। চারা গজানোর আগ পর্যন্ত আর পানি দেয়ার প্রয়োজন নেই। চারা একটু বড় হলে দু-তিন সপ্তাহ অল্প পরিমাণে সেচ দিন। দু-তিন সপ্তাহ পরই মুলা সংগ্রহ করা যায়। মুলা সালাদ, রান্নার সবজি হিসেবে খুবই জনপ্রিয়।
গাজর: গাজরে পোকা-মাকড়ের আক্রমণ নেই বললেই চলে, যে কারণে চাষ করাও খুব সহজ। এর চাষ পদ্ধতি অনেকটা মুলার মতোই। ৫-৬ ইঞ্চি পর পর গাজরের বীজ বপন করুন। সেচ দেওয়ার পদ্ধতি মুলার মতোই। গাজরে প্রচুর পরিমাণে ভিটামিন এ, বিটা ক্যারোটিন আছে। সালাদ হিসেবে আমাদের দেশে বেশি জনপ্রিয়।
পালংশাক: পালংশাকের বীজ ২৪ ঘণ্টা ভিজিয়ে রেখে একটি পরিষ্কার সুতি কাপড়ে মুড়ে রাখুন। পরবর্তী ২৪-৪৮ ঘণ্টায় এর বীজ বোনার উপযোগী হবে। তবে বীজ বপনের পূর্বে মাটিতে ভালোভাবে জৈব সার দিন। মাতি প্রস্তুত হলে একটি নিড়ানি দিয়ে মাটি কুপিয়ে ঝুরঝুরে করে বীজ বপন করুন। কয়েক সপ্তাহের মধ্যেই আপনি শাক তুলতে পারবেন। আগে যে গাছগুলোর পাতা বেরুবে সেগুলো আগে তুলে নিন।
