I'm very happy that your meat reserve is in a good level, that helps you to be more relaxed, and it must be very rewarding after so much effort. It is also great to prepare the sausages at home, we have prepared them twice. What we prepare most often is Chorizo Venezuelan style, it is prepared by grinding the meat with different seasonings, such as parsley, onion, peppers, cilantro, chili, among others. Once everything is processed, the seasonings are added and it is stuffed into a gut, in our case it is synthetic, but it is edible. It should be kept frozen, because it is not pre-cooked, and when it is going to be consumed it is cooked.
