Kanistel fruit has flesh with a texture and taste similar to boiled yam or tapai cassava. In Indonesia, this fruit is usually eaten directly as fresh fruit. But in some other countries, the flesh of this yellow yam is mixed with salt and pepper, orange juice, or mayonnaise, and eaten fresh or after it has been heated for a while. The wood is grayish brown to reddish in color with a fine texture, strong, hard, and of medium to heavy weight, good for making boards or blocks. In Central America, the latex is tapped to mix manila sapodilla gum, used as an ingredient in chewing gum. Alkesah trees are often planted as shade or garden decorations.
