Just know that you have to brine the chicken ahead of time. Brine the pieces of chicken with 2 cups of cold tap water, 2 tbsp salt, 4 tbsp of sugar, 2 whole pieces of crushed garlic, 3 round slices of ginger for about 12-24 hours. After you brine, drain the chicken pieces, and take out the garlic and ginger. In another bowl, combine 1 cup of AP flour, with 1/2 cup of corn starch, 1 tsp of baking soda, 1 tsp of salt, and 1 cup of water. Pour the batter over the chicken and coat well. Fry the first time in 275 degree oil until light golden brown, then another time at 350-375 until golden brown.
