True, they taste sun dried. It's a good way to long term preserve vegetables, especially with a vacuum pack!
I've even taken frozen vegetables, and dried and packed them. They're already blanched that way, and when dried and vacuumed they will keep for many years.
Still more to process to be prepared well.

Colourful! We do have a vaccuum sealer, as well as the dehydrator, so I will have to figure out how to use it. I think I can get an attachment so that I can suck the air out of jars.
Yes there is a common attachment for canning jars, that allows for a vacuum to be applied. I like to buy the cheap silver lids that I won't trust in a canner, to cap these vacuumed jars. They can be reused indefinitely in this service. The dehydrator will have an online book on 'how to' for your model!
Here are cherry tomatoes after drying. They must be sliced in half first, or they'll never dry. Each quart is 8 pounds of cherry tomatoes originally, so their volume is greatly reduced by dehydration!

We have a store that gets truckloads of things undeliverable to stores and restaurants. They were selling these for a dollar, so I filled these quarts for four dollars....
