Who among you here loves or likes jackfruit? Here in our place it is called "Nangka" or "Langka" in vernacular. It is a tropical fruit commonly found in Asia. This is my Uncle's fruit tree planted in my mother's backyard.
We all know that jackfruit is rich in carbohydrates, which are high in natural sugars. People with diabetic must limit their intake with this fruit. Last night, i cooked creamy maja blanca with jackfruit strips in it. It was really so delicious, and its aroma enhances its flavor.
Do you know what pigments that gives the jackfruit its yellow color?
It is called carotenoids. This carotenoids are high in Vitamin A, and like all any antioxidants , it protect our cells from damage and help our body work right. Research also shows that they help prevent diseases like cancer and heart disease, as well as eye problems.
