When Your Parents Visits You!

My parents planned to visit our place the day after my birthday. It has been several months since they last visited us, so we invited them to join us for lunch.

So we had to make several arrangements for their visit. Most importantly we had do decide what to serve for lunch and then shop to buy groceries. As only the parents visited without the brother we decided to make a biryani. We had tried to make biryani before but it didn't come really well. So this time we went through several YouTube videos to understand the process.

Then we purchased all the necessary items to make chicken biryani. Our plan is to make minchi sambal and potato curry as side dishes. Eventhough potato curry is not a part of regular biryani side dishes we thought to have it.

We started around 9.30 am cutting and chopping ingredients. Also the same time I put the chicken to marinade with yogurt, mint leaves, coriander leaves, biryani masala, chili powder, and salt.

Once all cutting and chopping were done, we made the mint sambol. It was easy to make and what you all have to do is add mint leaves, coconut, salt, pepper, red onion, and some garlic together with a bit of water and blend.

After keeping 2,3 minutes in blender we can adjust the taste accordingly.

While the potato curry was cooked we started to cook the chicken. First, we fired tomato, onion, green chile with a piece of cinnamon, ginger and garlic. Then the pre-marinated chicken was added to the pot. After frying for one-two minutes, we added water enough to cook the chicken. Meantime we put the rice in the rice cooker with less water than normal.

We stopped the cooker before it auto-off added the cooked chicken mix to the cooker and let it cook for a few more minutes with rice.

With this, the mixture is absorbed to the rice as well. At the end, we adjusted the taste by adding little more salt.

Harith's mother prepared us fried onions and eggs and we also fried some cashews to put as the topping.

Our meal was perfect this time!
