A few days back I mentioned about me trying my hands on making some cookies. Let me tell you they turned out to be very good and just very suiting to my pallet. I did not want it very sweet, and I wanted it very healthy and organic. It is difficult to get things your way in the market these days, so it's best you make it yourself and be assured that you are having good clean food.
Here is the final dish
Let me share my recipe with you. It's gluten, sugar and lactose free but yet very tasty. Since I was making it for the first time I tried it in a very small quantity.
Recipe
- Almond Flour 2 tblspoons
- 2 Eggs
- Coconut Sugar - 2 tspoons, this can be added more as per one's sweetness requirement. Honey can also be added in addition to this
- Baking Powder
- Dark chocolate chips ( I used 80% dark chocolate in this one.
- 1 spoon Ghee
- Vanilla essence few drops
How to prepare
In a dish break the eggs, add ghee and vanilla essence and mix it together. After that add almond flour and mix it up all.
Add the coconut sugar and baking powder and mix it up all well
Then grind up the dark chocolate and mix it with the dough. I have not made a powder of the chocolate, just a little grind to keep it coarse.
The mix is ready. Keep it in the fridge for around half an hour. Later remove it and set it on the baking tray, in the shape you desire. Place a parchment paper on the baking tray so that it does not stick to the tray and also moist the tray with a little ghee for the cookie to not stick up to the paper.
Preheat the oven at 280 degrees for 5 mins.
Set the tray in the oven. I put it on 280 degrees and the top burner is also on. It took just 10 mins to bake up. After removing it from the oven. Allow it to cool completely by itself. Immediately if you try to taste it you will find it soft. It takes some minutes to harden up completely once it's removed from the oven
Cookies are ready
I am happy with the result. They are not at all very sweet and just suit my taste buds so perfectly. The best is that they are very clean an no preservatives, artificial sweeteners, oil or gluten and lactose content. My perfect way to healthy snaking :-)
