I cooked pork humba for our dinner. My nieces and nephews felt glad and excitement when they knew that I am going to cook it because it is one of their favorite dishes.
I prepared the following ingredients:
1 kg pork belly, cut into serving pieces (marinated)
1 1/2 cup water
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup brown sugar
1 onion, chopped
4 cloves garlic, minced
60 grams black beans
Ginger
2 bay leaves
1/2 teaspoon ground black pepper
1/2 teaspoon salt
Here are the following steps in cooking:
Heat a cooking pot or a deep pan over medium heat.
Add the pork belly pieces and cook until they turn brown and the fat has rendered.
Once the pork is browned, transfer it to the cooking pot, add the minced garlic and chopped onions.
Pour in the soy sauce and vinegar. Let it simmer for a few minutes to remove the vinegar's strong smell and taste.
Add the brown sugar and stir well until it's fully dissolved.
Pour in the water and add the bay leaves, ground black pepper, and salt. Mix it thoroughly.
Cover the pot and let it simmer over low to medium heat for about 1.5 to 2 hours or until the pork becomes tender. You may need to add more water if it becomes too dry.
Taste and adjust the seasoning if necessary. You can add more sugar, soy sauce, or vinegar according to your preference.
Once the pork is tender and the sauce has thickened to your liking, remove it from heat.
Serve the Pork Humba hot with steamed rice.
