Our Lunch for Today (Pork Nilaga)

I am preparing for our lunch. I cook pork nilaga because it is not only tasty but it is also full of nutrients.
"Nilaga" means "boiled" , and this dish reflects the simplicity and straightforwardness of Filipino cuisine. It embodies the essence of nurturing, home-cooked meals that warm the heart and bring families together.

To prepare a delightful Pork Nilaga, you will need the following ingredients:

  1. Vegetables such as string beans, squash, okra, and sayote.
  2. 1/2 kg pork shoulder or pork belly, cut into chunks
  3. 2-3 cloves of garlic, minced
  4. 1 medium-sized cabbage, cut into wedges
  5. 2-3 stalks of green onions, chopped (for garnish)
  6. Fish sauce (patis) or salt, to taste
  7. Ground black pepper, to taste
  8. 1/4kilo bamboo shoot

1: In a large pot, bring water to a boil. Add the pork chunks and let it simmer for a few minutes.

2: Add the diced onion, ginger and minced garlic to the pot. Stir and let them sauté for a couple of minutes until fragrant.

3: Pour in enough water to cover the pork completely. Cover the pot and let it simmer over low heat until the pork becomes tender.

4: Once the pork is tender, add the vegetables and bamboo shoot and cook until they are fork-tender. Season the broth with fish sauce (patis) or salt, according to your taste preference.

5: Finally, add the cabbage to the pot. Let them cook for a few minutes until they are slightly wilted.Sprinkle some freshly ground black pepper and garnish with chopped green onions for added flavor and freshness.

6: Serve the pork nilaga hot in bowls.
