Since 2000 or so they began pumping large amounts of wheat into almost every product found in stores. And at the same time, they changed the genetics of wheat, so the plant produced a lot more gluten. And glyphosate is used to dry out the wheat before harvest, leading to contamination of almost all wheat with Monsanto... which our bodies mistake for an essential amino acid. Meaning the chemicals get incorporated into our proteins and DNA. So people are eating a lot more gluten than ever before, and it's far more loaded with dangerous toxins than ever before. So we see the same number of people with celiac, but a massive rising amount of people with other gluten intolerances. IMO we should try and get it out of our diets completely, make it a thing of the past, except in small amounts in organic wheat varieties like Red Fife.
