MY BEST COMMUNAL FOOD

Ofe ugba is a native soup that is quite common to the indigenous people of mbaise, and Imo state. It's basically your typical okro soup, with the addition of ugba (processed oil bean seed).

How it is prepared

  1. Stockfish is boiled in the necessary amounts in a cooking pot until it softens.
  2. Then, dry fish, ugba, crayfish and pepper (pounded), ogiri okpei, smoked fish, onion and palm oil is added.
  3. They are covered and cooked on high heat, while being stirred continuously.
  4. After about 5 to 7 minutes, sliced leafy vegetable and cut okra are added to the mixture with salt. (The quantity of water in the pot just before adding the vegetables should be just right).
  5. The soup is then boiled shortly to done.

The preparation of this native soup is simple basically but requires adequate pre-preparation of the ingredients. When cooked with meat, the meat and Stockfish are boiled together. The ingredients may be varied in quantity to each person, feel free to experiment on it. This lovely dish can be eaten with any swallow of your choice, fufu, garri, pounded yam, wheat, semo, etc.

It's is also called ofe ukpaka or okwuru ugba, but is especially a special dish to the people of mbaise. I hope you enjoy it too!
