Here is all that I ate in a day. Having meals with a toddler is a bit challenging but moms should stay fit and healthy to take care of their children and family. Therefore I try my best to have something healthy for all three meals. Luckily I have my parents with me.
My mom supports me in every way possible. She takes care of my meals most of the time. Cooking is sometimes impossible with my little one so on those days I feel how much it means to be a near mom.
So today hubby was away from home, and Mom made all preparations for Breakfast, Lunch, and dinner. I too try to help her when the baby isn't too clingy. I try to keep my baby busy with toys but some days he only wants me.
That's the way of babies, we should adjust to that. Today is a somewhat similar day to me as I mentioned above.
He is already in my hand while I make the fried rice
The morning I had cowpea, My mom knows to make it very deliciously. Normally we have it throughout the day as a snack. Mom has made her known recipe to make cowpea she makes it in an Indian style adding Potato and spices. The traditional way of eating Cowpea is by just boiling and then adding grated coconut accompanied with red chilies Sambol. Since we had Cowpeas for breakfast baby's breakfast was also ready within an instant. It is very nutritious and easy to make when in hurry.
For Lunch, I made fried rice. Mom helped to wash and clean all vegetables and cooked rice. Meanwhile, I made baby food. I made vegetable rice for him too. He loved it, I could feed him without any trouble.
I prepared baby's lunch and dinner together
Once mom made all preparations I started chopping vegetables.
Then I added all ingredients one by one and let it fry.
This was the final outcome. Looking yummy right?
We had leftover chicken curry at home, It went well with my fried rice.
It was time for dinner. We had plans to make Dosa tonight. We make the Dosa mixture at home from fresh Urad dhal. Dosa can be made instantly with the mixture powder available at supermarkets but we are used to the taste of fresh Urad dhal.
Mom has already prepared the Dosa batter. And she also made the vegetable sambar and the Coconut chutney. what is left for me is to fry the Dosa in a pan.

Usually we make green chutney with mint leaves but today we didn't have mint leaves at home so mom made it with tempered chilies
