Today is Pancake Day and it is a great excuse to make pancakes as a good evening dinner. My wife was passing by the shops this afternoon so stopped by and picked up the necessary ingredients that we didn't have. She was very excited about Pancake Day since I mentioned it yesterday and when I said I would make some, she nearly fell over.

It is hard to make pancakes vegan because of the eggs and through previous experimentation, I have found that it is possible to swap the cow milk for the Mandel milk, but getting rid of the eggs doesn't seem to work very well. Switching to Mandel milk gives the mix a really nice aroma too, so it is a win/win.

First, I added 250ml of flour and then around 300ml of Mandel milk. To this, I then added 2 eggs and mixed them all together.

After mixing up my Pancakes, I just squeezed some lemon on them and added a little sugar so they taste like my childhood memories.

One thing to note is that this is the same mix that you can use for Yorkshire Puddings which are a good addition to any Sunday lunch.

The adding of sugar kinda shocked me, I had sugar with plain bread when I was a kid, a couple of times :)) but never with pancakes, they were always with some kind of jam mixed with some cheese. I'll steal your recipe though!
