Yam Pottage And Ukpaka (African Oil Beans Seed) - Eastern Part Of Nigeria Delicacy

Today I'll be talking part in the food contest organized by @blurtconnect.

I'm supposed to call this a mix dish, but I like to call it yam pottage with Ukpaka (African oil beans).

There are other ways to prepare this dish, but this one appears to be my favorite.

I'll show you some more ways to cook yam and yam pottage later, but for now, let's start with this one... Let's get started on the steps.

INGREDIENTS

  • Yam

  • African Oil Beans (Ukpaka)

  • Ugu leaf

  • Red Pepper (Blended)

  • Palm Oil

  • Onions (Sliced)

  • Salt and Maggi.

Step 1: Cut and slice the yam into your preferred piece, the wash and rinse with clean water. Place a clean pot on a high medium heat add the yam and water then boil for 10 minutes. Add the blended pepper and palm oil allow to cook for a minute.


Step 2: Wash and slice the onions into tinny pieces then pour in the sliced onions cover and allow to cook for 2 minutes.


Step 3: Wash the ugu leaf with warm water, make sure you wash it very well to remove stain and dirt.. now sliced the ugu leaf and set aside.


Step 4: Add the sliced Ugu leaf (vegetable) and the Ukpaka (African Oil Beans Seed), cover and cook for 15 minutes.


Step 5: Bring out a wooden turning stick use it to stir the pottage, reduce the heat allow to simmer for 1 minute. Turn off the heat and serve.


Now serve and enjoy, make sure you serve with the chilled drink (recommended).. enjoy and don’t forget to share with your neighbors 😁
