These legume croquettes are very similar to meat croquettes in texture and nutrients, and it is a creative way to give children a healthy dish, and they can also be an appetizer for parties.

Ingredients
250g of lentils
4 cups of water
1 egg
½ cup of wheat flour
(you can also use breadcrumbs or cornmeal)
1 teaspoon salt
100g of assorted branches: Parsley, leek, cilantro, or parsley.
4 cloves of garlic
2 sweet peppers
1 cup of oil.
Preparation
1- Wash the lentils well, in a cup or bowl soak them with enough water to cover our lentils for half an hour before starting to cook them, this will serve to soften them previously.
2- While the lentils are soaking we can move forward by washing and cutting the branches and vegetables.
3- Once the half-hour has passed we are going to cook our lentils in a pot with the four cups of water, the water must be boiling before placing the lentils.
4- Next we are going to place our branches and vegetables, the garlic cloves, and the teaspoon of salt. Let cook over medium-high heat for 1 hour or until the lentils are soft and a stew has been made with the vegetables and dressings.
5- Once our lentils are cooked, we proceed to separate the grains from the broth. And that is when we are going to place the egg and the ½ cup of wheat flour, mix everything while heating our cup of oil in a pan to start frying our croquettes.
6- With the help of a spoon we are going to take the mixture of the lentils and we are going to place it in the pan where the oil must be hot, the temperature of the kitchen is medium-high heat, and our croquettes fry super fast like this that we must be very careful so that they remain golden brown but not burnt.
And that's it, serve them accompanied by a suitable side dish.
