Greetings everyone Trust you guys are doing just fine. Welcome to my blog once more. I want to share with you guys one of my favorite food called Rice and Beef Stew and how it is prepared.
Beef Stew is a very spicy and aromatic stew made with fresh tomatoes and fresh pepper and a welled spiced beef. This a very delicious and popular delicacy in Nigeria.
I remember in our house back then when i was small we always make sure we have a pot of stew in our refrigerator. It can be eaten with anything like white yam, parboiled rice and so on. Every house hold in Nigeria always has a pot of stew in their homes either fresh or fridge.
Ingredients
The main ingredients in this recipe is the fresh tomatoes, fresh pepper. I used beef to prepare it. You can use any other meat when it comes to protein most people uses chicken, goat fish egg and so on. You can feel free to use anyone you want.

- Curry Poweder
- Thyme
- Black Pepper
- Ginger Powder

- Seasoning(Knorr Cube)
- Tomatoes
I used fresh Tomatoes to prepare my stew. Some people normally use the fresh tomatoes and tomato paste so as to get the flavor and a reddish color but i like using only fresh tomatoes to make my own stew.
It is very important to cook and fry the tomatoes so as to get rid of the water and bitter taste of the tomatoes. Cooking your tomatoes helps to preserve it if you don't want to cook it immediately. You can cook it and put it inside the refrigerator.
- Beef
For this recipe I used Beef and I cooked and fry the beef before i added it to the stew. Before I added the beef in the stew i season it with spices like curry powder, thyme, ginger, garlic seasoning powder (knorr), fresh pepper, black pepper and i allowed it to steam up 20-30minutes.
• After steaming the meat i brought out from fire and put the pot i want to use in preparing the stew on fire. I added grand-nut oil and fried the meat for 5mins.
• Then i added the cooked tomatoes inside the meat that is frying to fry together with the meat. If you don’t fry the mixture long enough you will get a sour taste. When the color is deep red and the oil rises back up over the mixture that when you know that it is ready. Then i added the meat stock to the fried tomatoes and allowed it for some minutes to boil very well.
You can use the stew to eat anything you want like, parboiled rice, yam, beans and so on. I love eating mine with rice and yam sometimes bread.

Preparation of white rice is very simple. Boil the amount of rice of your choice then you rinse out the per-boiled rice then you put it back to the pot then you add salt and allow it to come for some minutes then you are good to go.
