I finally tested this awesome recipe and am LOVING IT! Definitely becoming a favourite for homemade quick and healthy bread. With only 4 ingredients that are usually in the cupboard, there is just no excuse for fresh healthy bread.
Here’s how to make it at home!
INGREDIENTS
3 over ripe Bananas (peeled)
2 cups rolled Oats
2 large Eggs
1 tspn Bicarbonate Soda
OPTIONAL EXTRAS
3 tbsp Honey or maple syrup for a sweeter bread (I only added 1 Tbsp of honey)
Chopped walnuts to add texture (mixed in or on top)
Sliced Almonds on top just before baking
½ cup choc chips (stir into mixture before pouring into your tin)
METHOD
Preheat oven to 180C.
Spray and line a small loaf tin. 8x4inch.
Mix them all in a bowl until reasonably smooth.
Add any of the above optional extras.
Pour into your loaf tin.
I sprinkled Sliced Almonds on top at this point.
Bake for 35-45 mins.
My oven is fan assisted and took 35 mins.
Serve fresh / toasted / with or without toppings.
Best kept in an airtight container in the fridge or can be frozen and defrosted later.
It’s so tasty and a healthy snack that you won’t need to feel guilty about.
