Red Curry

I don’t know how authentic it is but this is my red curry. I use an online recipe for measurements and directions but use Bay leaves instead of lime leaves, regular basil instead of Thai basil, and this one has yellow squash, chayote squash, and zucchini with chicken. I use maesri paste and add ginger, lemongrass and garlic. Fish sauce, sugar, coconut milk. It’s became one of my favorite dishes ever.
