Delicious Almond Tofu! (Almond Jelly)

Filled with childhood memories and love. So refreshing and very easy to make! Only 5 ingredients, one of my favorite Chinese desserts.

Recipe:

  • Water (3 cups)
  • Milk (2 cups) can also use almond milk
  • Sugar (1 cup)
  • Gelatin (4pks / 28 grams)
  • Almond Extract (1 fl oz. / 28 grams)
  • Canned Fruit Cocktail (2 cans / 30 oz)
    Prep 1 cup of water and mix with the gelatine, it should begin to form. Put this aside.
    Now boil the remaining 2 cups of water with the sugar until it dissolves, then add in your gelatine to the pot. Now wait until the mixture is clear.
    Turn the heat off, then add in the milk followed by almond extract. Stir everything until well combined.
    Pour out mixture into a tray, making sure it's not too thick as this will make it harder to form. (split into 2 trays if needed)
    Cool in the fridge for minimum of 3 hours, or until fully formed.
    Take out and cut into cubes in a grid pattern. Using a flat edge, transfer cubes into a serving bowl. Add some fruit cocktail for an extra boost of vibrance and flavor!
