Best Thai noodle dish

Best Thai Boat noodle dish I ever found to my liking was a real authentic Thai Boat noodle I found in Sai Mai district in Bangkok, at Sai Mai Soi 43. A little family owned vendor, this dish can be very Regional I prefer not to have the one in the north where they add Chinese five-spice to the broth, or the one I see more commonly in the east where they add star anise to the broth. I prefer the pork over the beef boat noodle, with the tender cut pieces of pork meat , and pork balls, I always tell them to hold the pig liver I'm not a fan of any liver or lungs, LOL. I love the hollow morning glory water vine used as the green in it. And the very dark brown broth, with fresh Pigs blood added to the broth right as it is served hot. Mmmm Mmmm good. Whenever I travel back to Thailand it is my very first stop and my very first meal in Bangkok every time. ;)
The vendor family in Sai Mai comes from a fishing community where Thai Boat noodle was originally from, The dish was called Thai Boat noodle because fishermen used to eat it for lunch on the boat that is why you use a bigger bowl to hold it and put Less in the bottom as the boat rocked it would not spill out. That is why the bowls just like I posted in this photo look like they are half full. ;)
The fisherman working hard needed something to eat on the boat that had high protein levels, for the boost in energy well they worked hard on the boat, this is why people developed Thai Boat noodle in Thailand. I also like it served with the very thin rice noodles, phonetically sounded name "SenMe" noodles.
