I got one perfectly adorable eggplant and mushrooms in my Imperfect Foods box this week. Naturally, I made my childhood favorite: stuffed eggplant 🍆❤️
Here’s what I used:
*one adorably small 🍆
-make about 1 inch thick slices with a cut down the middle (see pic)
-I made 6 total
Stuffing: dice and mix everything below
*9 medium sized shrimps 🍤 x 9
*1 fillet of tilapia
*1 slice of bacon
*about 1 cup worth of mushrooms
*1 small shallot
*Some scallions (about 2 tablespoons worth)
*minced ginger (I didn’t use much at all)
*1 teaspoon of soy sauce
*1/4 teaspoon of sugar
*1 teaspoon of Chinese cooking wine
*1 teaspoon of oyster sauce
*1/2 tablespoon of corn starch
*1/4 teaspoon of sesame oil
*few dashes of white pepper
The prep:
*coat the 🍆 pieces with extra cornstarch inside and out
*stuff the 🍆 and pack ‘em tight!
*fry in a skillet on high heat with oil - use tongs to fry the stuffing sides first to lock in the juices, then lay them flat on the skillet
*turn heat down to medium and carefully turn after a few minutes to fry the other side
*add 1/2 cup of chicken stock to the
*cover with lid and let it simmer
*after a few minutes, remove the lid and let the sauce cook down
*everything is cooked at this point, so be careful not to move them too much or they will fall apart
Carefully remove and plate! Drizzle extra sauce on top and dig in. This brought me way back and now I miss my grandma. ❤️
