Made several different kinds but here’s two. Classic Nappa cabbage kimchi and baby nappa and radish top kimchi.
The ingredients were sweet rice whole and powder, ginger, garlic, apples, baby salted shrimps, anchovy plus sauce, scallions, carrots, onions,red leaf mustard, radish,fish sauce, and chili powder.
Ended up with
4-5 gallon buckets of Kimchi
2-1 gallon jars of the mix baby cabbage and radish tops
1-5 gallon bucket of water kimchi not shown.
