4 eggs
3 cups flour
2 cups sugar
1/4 cup juice of your choice( I use apple or orange juice)
1 cup oil
1 tablespoon vanilla
Two teaspoons baking powder
1/2 teaspoon salt

Mix eggs and sugar until fluffy and lite in color
Add oil, juice and vanilla.
Sift together flour salt and baking powder
After sifting add into batter. Set aside until needed

Filling

4 Granny Smith apples
1/2 cup lite brown sugar
1 Teaspoon vanilla
One cup raisins soaked in warm water or rum. Before mixing with apples drain liquid and pat dry on a paper towel
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Glaze

2 cups powdered sugar
3 tablespoons butter room temperature
1 Teaspoon vanilla
3 to 4 tablespoons milk or heavy cream.
Whip butter and powdered sugar add vanilla and little by little add the milk. Whip till smooth use on cooled cake otherwise it will melt.

Mix apples, raisins, vanilla and all spices with the brown sugar .

When making the cake first butter or oil the baking pan. I usually use a Bundt pan , or a 9 by 3 or even a 10 by 3
The rotation is batter, filling batter filling.

Bake at 350 for about 45 to 55 minutes or until a toothpick comes out clean after testing

After cake is completely cooled I usually like to ice it or powder it with sugar.
