This quick, simple and easy noodle stir fry is THICK, SAUCY and PACKS A PUNCH! Your tastebuds will thank you for this one.

Ingredients (serves 2):
☐ 2 serves of frozen udon
☐ 2 tbsp neutral-flavoured oil (vegetable, canola, grapeseed, etc)
☐ 4 garlic cloves (minced)
☐ 250g (8.8oz) minced pork
☐ 2 tbsp doubanjiang (fermented chilli bean paste)
☐ 1 tsp garlic powder
☐ ¼ tsp Chinese chilli powder (or to taste)
☐ ½ tsp ground Sichuan pepper
☐ 1 tsp sugar
☐ ½ cup water
☐ Spring onion (chopped)
☐ Coriander (chopped)

Instructions:

  1. Bring pot of water to boil. Add frozen udon and cook for 1 minute. Set aside.
  2. Heat up pan. Pour in oil and lightly fry minced garlic.
  3. Add minced pork and stir fry. Add doubanjiang, garlic powder, chilli powder, ground Sichuan pepper, sugar and water. Cook for 5-6 minutes, or till pork is browned and sauce is thickened.
  4. Toss in cooked udon and spring onion. Mix well and turn off heat.
  5. Serve with spring onion and coriander.
  6. Enjoy!
