It seems to me that only the appearance of this cake creates a festive mood, not to mention the taste. The specialty of this cake is the spicy plum.
INGREDIENTS
egg whites 6 pcs.
corn starch 1 tsp
vanilla essence 0.5 tsp
lemon juice 1 tsp
fine sugar 150 g
plums 12 pcs.
cinnamon stick 0.5 pcs.
star anise 0yu5 pcs.
liqueur 2 tablespoons
cream 33% 300 ml
powdered sugar 2 tbsp
STEP-BY-STEP COOKING RECIPE
Step 1
Heat the oven to 140 C. Beat the whites into a strong foam. Continuing to beat, add 1 tablespoon of sugar each until the foam becomes shiny. Whisk in the cornstarch, vanilla, and lemon juice. Place the egg whites on a baking sheet lined with baking paper in one round crust. Use a silicone spatula or spoon to make peaks and valleys on the surface.
Step 2
Bake for 45-60 minutes, until the bottom is dry and peels off easily from the paper. Cool the finished meringue cake on a wire rack completely.
Step 3
While the meringue is baking, add sugar to a saucepan and pour 300 ml of water. Keep on low heat until sugar dissolves, then, without stirring, quickly bring to a boil and cook for 2 minutes. Add spices and plums, cut into 4 pieces, cover and simmer for 10 minutes. Remove the plums with a slotted spoon.
Step 4
With a strong boil, boil the syrup by half, then cool at room temperature and pour in the liquor.
Step 5
Whisk the cream and icing sugar into a stable mixture, place on the meringue, spread the plums on top and pour over the syrup. It is better to do this just before serving.
