- 6 lonchas de ternera g 600
- 6 lonchas de jamón cocido g 150
- queso pecorino dulce en lonchas g 150
- un manojo de hierbas
- pasas sultanas secas
- perejil

- vino blanco

- 6 slices of veal g 600
- 6 slices of cooked ham g 150
- sliced sweet pecorino cheese g 150
- a bunch of herbs
- dried sultanas
- parsley
- butter
- white wine
- salt
- peppercorns

- Golpear las lonchas de carne con un ablandador de carne húmedo para igualarlas y aplanarlas al máximo.
- Colocar sobre cada una unas hojas de hierbas frescas, una loncha de jamón cocido, una cucharada de pasas sultanas, unas lonchas de queso pecorino, enrollar y sujetar los rollitos con palillos.
- Dórelos en una sartén, en una nuez grande de mantequilla espumosa.
- Pound the slices of meat with a wet meat tenderizer to even them out and flatten them as much as possible.
- Place on each one a few leaves of fresh herbs, a slice of cooked ham, a spoonful of sultanas, a few slices of pecorino cheese, roll up and fasten the rolls with toothpicks.
- Brown them in a frying pan in a large knob of foamy butter.
- Desglasar con un dedo de vino blanco, salpimentar y cocer, tapados, a fuego medio: en total serán unos 15 minutos.
- Completar con perejil picado.
- Repartir los roulades en los platos de servir, sazonar con su salsa.
- Servir inmediatamente, bien calientes: acompañar con puré de patatas, o con las coronitas verdes.
- Deglaze with a finger of white wine, season with salt and pepper and cook, covered, over medium heat: in total it will be about 15 minutes.
- Complete with chopped parsley.
- Divide the roulades in the serving dishes, season with the sauce.
- Serve immediately, very hot: accompany with mashed potatoes, or with the green crowns.
