Spare ribs with shiitake mushrooms and tofu in chilli black bean sauce made in Ninja Foodi Max Pressure Cooker.

Marinaded in a bowl for 25 mins in the fridge before PC (Pressure Cook).

PC on HI for 15 mins and 10 mins NR (Natural Release).

Ingredients:
Spare ribs (cut into pieces) - Chinese supermarkets will sell ribs you can cut between bone unlike main supermarkets like Tesco, Sainsbury’s. You can still get these but hard to cut into pieces.
Soak 3-4 dried shiitake mushrooms in boiled water in a bowl (for 30-60 mins) - squeeze juice out of each mushroom and cut into slices.
Keep the mushroom water for later before cooking.
If you do not have dried shiitake mushrooms, you can just use ordinary mushrooms - wash/wipe and cut the mushrooms into slices.
Cut 5 pieces of fried tofu into halves (got from Chinese supermarket).
1 tablespoon black bean sauce.
1 tablespoon light soy sauce.
1 tablespoon shaoxing wine (or Cooking wine).
1 teaspoon fish sauce (optional).
1 teaspoon vegetable or sunflower oil.
2 teaspoons minced garlic (or chopped 2-3 garlic
cloves).
1 tablespoon Chinese five spices.
Sprinkle of chilli flakes (or fresh chopped green and/or red chilli).
Spring onion cut into small pieces.
Cut a slice of ginger into smaller pieces.
Pinch of salt and pepper.

Mixed all Ingredients together into a stainless steel or cooking glass bowl that fits into the ninja pot.

Cover with cling film and chill in fridge for 20-30 mins.

Cooking Instructions:
After 20-30 mins, take bowl out of fridge.
Remove cling film.
Mix 1 tablespoon of corn flour, 1 tablespoon oil (veg or sunflower) and 3 tablespoons of the mushroom water (or just water) into bowl with the ingredients.
Put a trivet into pot.
Add 250ml cold water into pot.
Put bowl of ingredients on top on trivet.
Close PC lid.
Set to Seal.
Select Pressure on HI for 15 mins and NR (12 mins. Valve might drop by 10-11 mins).

If you do not have a pressure cooker, you can use a large wok and steam on a trivet with water up the the base of the bowl and cover with lid and steam for 55-60 mins. Or in a steamer if you have one.

Cook rice separately.

After NR, serve with the rice and any of your favourite side vegetables. Chinese vegetables like Pak Choy or Choy Sum goes well. I steamed tenderstem broccoli separately. 😋👍
