가지무침 - Seasoned Steamed Eggplant

Ingredients:
Asian Eggplant (If you use American eggplant then slice and add salt to the top layer let sit 30 minutes, wash then use - this removes the bitter flavor)
Garlic
Green onion
Red pepper flakes
Sugar
Soy sauce
Green plum syrup
Sesame oil
Sesame Seeds

Directions:

  • Cut eggplant in half lengthwise, then into 1/3 pieces.
  • Then steam 4-5 minutes (don’t steam too long).
  • After done steaming, let cool a bit then pull apart into strips.
  • Make the sauce by adding red pepper, flakes, minced garlic, sliced green onion, sugar, soy sauce, green plum syrup, sesame oil and sesame seeds.
  • Toss the eggplant in the sauce and serve!
