The other day for lunch, I experimented with kimchi fried rice. Instead of adding my usual gochujang and soysauce, I increased the red pepper flakes and just added a little bit of garlic salt. Still came out really delicious. 😋
Ingredients:
1 cup rice
spring onions, chopped
1/2 cup spam or bacon, diced
1/3 cup kimchi, chopped into small pieces
1/4 cup kimchi juice
1 tsp gochukaru (Korean red pepper flakes)
1/4 tsp garlic salt
1/2 tsp Korean sesame oil
Optional:
1 tbsp mayonnaise (adds a creamy taste, mix it in before serving)
Toppings:
sunny side up
roasted seaweeds
sesame seeds
Procedure:
- Sauté springs onions in 1 tbsp cooking oil then add the spam and cook until it browns.
- Add the kimchi and sauté for about 2 minutes. I usually separate the kimchi from the juice so it gets a little bit toasted.
- Add in the kimchi juice and let it simmer for about 30 seconds to a minute then add the rice, gochukaru, and garlic salt. Once it's cooked, turn the heat off and drizzle some sesame oil.
