Ingredients
[ ] 1 whole chicken
[ ] 1 lb chicken bones
[ ] 1 whole onion charred
[ ] 1 piece of ginger sliced 1/4 inch charred
[ ] 1 bag of pho seasoning
[ ] 1 large rock sugar
[ ] Fish sauce
[ ] Pho noodles
Toppings
[ ] Chopped green onions and cilantro
[ ] Sliced thai red chili
Salad Ingredients
[ ] Chicken meat torn into bite size pieces
[ ] Sliced red onions
[ ] Shredded cabbage
[ ] Cut cilantro
[ ] Cut mint
[ ] Cut Vietnamese coriander
[ ] Fish sauce
[ ] Sugar 1 tblspn
[ ] Garlic
[ ] chili
[ ] Lime juice
[ ] Hot water
[ ] Salt and black pepper
Preparation
- Clean chicken and chicken bones with salt and vinegar, rinse well and let dry.
- In a frying pan, lightly toast the pho seasoning and put it in a cheese cloth, tie it tight.
- Fill a stock pot with water and put chicken, bones, charred onion, charred ginger and spice bag into pot. Bring to a boil and cook on med/high for 30 minutes or until chicken is cooked through. Check by sticking a chopstick inside the thickest part of th chicken. If blood comes out, cook longer.
- When chicken is cooked, take out, strain and let cool.
- Continue to let the soup simmer with the chicken bones. You can leave bones in or remove the bones before you ladle the soup into the bowl.
- Prepare the pho noodles, add the chicken, ladle the soup, top with green onions and cilantro.
Salad - Make the dressing: add 1 tblspn of sugar to 1/4 cup of hot and dissolve the sugar.
- While you are waiting for the water to cool, mince garlic ad thai chili into tiny pieces.
- Add 1 tblspn fish sauce to the cool sugar water, add chili, garlic and squeeze in 4 wedges of lime. Taste and adjust accordingly by adding more sugar or fish sauce. It should be a good balance of sweet and salty with a hint of lemon at the end.
- Prepare the onions: put sliced red onions into a mixing bowl.
- Add a dash of salt, 1 tspn of black pepper and little bit of sugar. Queen in 2 wedges of lime and mix well.
- In a huge mixing bowl, add shredded cabbage, drizzle on some dressing and mix well. Taste the cabbage to make sure that its thoroughly coated. Add more dressing until its to your liking.
- Mix in the red onions next and then the coriander, mint and cilantro.
- Lastly, mix in the chicken and serve.
