I’ve been lazy about making kimchi for a while now but still gotta have my fix. So I started making kimchi that’s simple enough to make in 30min and can be eaten right away. Boochoo(? 부추 - I think it’s chives)kimchi and shredded radish kimchi (2 versions). I’ll post the recipes tomorrow if there is interest as I’m ready to crash right now. 🥱

Also want to add, you can adjust the taste (level of spice, sweetness, sourness etc). I usually omit sugar or add a small amount if I'm using plum syrup, and I never use the full amount of red pepper flakes the recipe calls for as I don't like things too spicy. It will not give you the redness but I'm more for taste than the visual.
