Quick lunch - chicken with broccoli, carrots, celery and corn

There are some combinations of ingredients that you don't expect much from and end up being blown away when you try them. And then you make them over and over again...

Chicken with vegetables is a common dish in my family, but there is one combination of vegetables that I particularly like. I didn't even know I liked it so much until one afternoon my husband made it especially for me because I kept saying how hungry I was all day. He used all the vegetables we had in the fridge that day and usually such combinations turn out the best.

To prepare this quick lunch, you need 300g-500g of chicken meat.

Three types of vegetables: celery, carrots and broccoli. And corn.

Corn is a special ingredient, we all love it very much.

I had an assistant, you can see his hands all around. He shows you all the ingredients you need. 😊

First you need to make the marinade for the meat. Put the spices you like. My spice mix consists of curry, turmeric, pepper, lemon pepper, thyme, crushed pepper, and sesame.

Add a spoonful of starch mixed with a little water.

And 2 tablespoons of soy sauce.

Stir it well.

Put the meat cut into pieces into the prepared marinade and leave it in the fridge for half an hour.

Heat some water and add salt.

Cut the broccoli and add it to the hot water.

Cut the carrot and celery and put them in the water as well.

After 10 minutes, pour off the hot water and pour cold water over the vegetables. And then pour off the cold water too and leave the vegetables aside.

Heat some oil in a wok and fry the meat on medium heat.

After a few minutes when the meat is fried, take it out on a paper towel to drain the excess fat.

Now add the corn. I put frozen corn.

Fry it for 5 minutes and then add the blanched celery, carrot and broccoli.

Fry for a maximum of 10 minutes and add the meat and stir.

Mix again a spoonful of starch with a little water and add seasoning.

Pour over the dish and fry for a few more minutes while stirring.

Cook rice as a side dish and enjoy this wonderful meal. 😊
