A salad of course.
Lettuce, onion, tomato, green pepper and I think there is some cucumber playing hide and seek. How about these zany multi-colored croutons? A light vinaigrette dressing adds a little zing to the final product. A fresh squeezed lemon if you have some on hand for that final topper.
