Korean Kimchi Fried Rice

I was kinda tipsy today; however, the family still needs to eat so I decided to make my 10 minutes Korean Fried Rice.

Recipe For Korean Kimchi Fried Rice

  1. Cut up 1.5 cup of sour Kimchi to smaller pieces. Cut up your choice of protein (shrimp, chicken, etc). To cut down prep time, I used 4 cooked chicken sausages (you may use cooked shrimps). Prepare 3 cups of cooked rice.
  2. Preheat pan/wok over medium-high heat. Add about 2 tbsp oil, kimchi (no juice), and stir for about a minute or until fragrant. Add sausage, stir to combine for another minute. Add cooked rice and stir to combine (about 2 minutes). Taste and adjust if needed. You may add 1 tsp Việt Hương fish sauce or 1/2 tsp Shiitake mushroom seasoning or 1/2 tsp chicken powder or 1 tsp salt (your choice) and stir to combine for another 30 seconds or 1 minute.
  3. Our two teenagers also asked for sunny side up to top their Korean Kimchi Fried Rice.

FYI: You may use regular kimchi to make this dish. However, this dish taste best when kimchi has already in its sour stage.
