Today, I made “guay thiew kua gai” (or “gai kua”). It’s a Thai street food or fast food dish that’s akin to pad-see-ew that’s stir-fried rice noodles (or ho fun noodles) with chicken, egg, and squid served along with green leaf lettuce and Sriracha chili sauce (the original Thai kind and not the Vietnamese-American Huy Fong or rooster sauce version).
