Thanks to my dad who I grew up with, he taught me how to prepare different dishes especially his favorites. I'm his eldest daughter and he wanted me to be better at cooking so he didn't fail in giving me his own recipe while I was growing up. His favorite meal is Banga soup and same goes to me so you could guess I know how to prepare that very well.
But for my second favorite which my dad also taught me how to prepare, Egusi soup. It's my favorite because of the ingredients used to prepare it especially the vegetables 😋 So I'll be sharing how I prepare my Egusi soup with a few pictures of mine.
That's the dried fish I got from a friend as a gift and I thought it would go perfectly with Egusi soup. It's smaller than it looks on the camera though.
This was after I pieced the fish, you could see it isn't very much as it looked in the first picture. So after that, I washed it with warm water before placing it in a sieve.
This is the main ingredient of Egusi soup, it's called Melon and it's in the grinded form already. I soaked it in small quantity of water before I made use of it for the soup.
These are fresh tomatoes and pepper, I bought it in small quantity because I wasn't planning to prepare a big meal and I don't like too much pepper meals. So I used my manual blender to blend them before using it for the soup.
This is the vegetable I used, it's called Ugwu leaf here in Nigeria. It's my favorite ingredient in Egusi soup. I made sure to wash them with salt before using them for the soup.
A Short Procedure Of The Meal
- I placed my empty pot on the gas cooker, allowed the pot to heat for about 3 minutes.
- I poured my palm oil and allowed it to heat for 5mins.
- Then I poured my blended fresh pepper and tomatoes and stir.
- I added my melon and covered the pot for 5mins.
- After 5 minutes, I poured the fish, added crayfish, Maggi, salt and lastly my vegetable then I stir for a minute before covering it to boil together.
I couldn't take pictures of the process because of a tiny situation but I hope the explanation was okay to an extent. So that was how I prepared my Egusi soup and here is the meal which I ate with our Nigerian favorite meal "Eba".
