Ok this one comes from my moms recipe book! We’ve got a sweet little tradition of making a copy of the home recipe book as an engagement gift to new soon to be wives. And anyone that knows my moms cooking appreciates this HUGELY!!! I’ve inherited the baking but not the cooking unfortunately.
This recipe only takes a few minutes to throw together, especially if you use the canned pied apples. Today I used fresh apples that had been sitting in the fruit bowl for ages! Time to go.
Did you know that fruit and vegetables are the number 1 thrown away food products?? Shocking. So I make a plan to bake with my fruit if it’s been sitting in the fruit bowl long enough.
Just peel, slice and steam the apples in the microwave for 3 minutes then drain off liquid and use as per the recipe. any type of apple should work, I happened to have Granny Smith apples in the kitchen.
Here’s how to make it:
INGREDIENTS
1 x 400g tin pie Apple OR 3 peeled and sliced apples (steam in the microwave for 3 mins)
1.5 cups Self raising flour (or cake flour and 1tsp baking powder)
1 cup sugar
1 egg
1 Tbsp oil
1 cup milk
2 tspn Cinnamon
Raisins (or cranberries), flaked almonds
METHOD
Put apple slices in a greased pie dish (or any similar oven proof dish)
Sprinkle with cinnamon
Add some raisins or dried cranberries (today I used cranberries)
Mix all other ingredients together with an electric mixer including 2 tspns cinnamon (Will work by hand too)
Pour the mixture over apples, it doesn’t have to look perfect
Sprinkle top with almond flakes
Bake 180 for about 35-40min (I check at 35 mins)
A toothpick should come out moist but clean.
The gorgeous golden Apple Pie isn’t too sweet and I love the added freshness of the apples. Serve with whipped cream or ice cream or enjoy as is!
I guess the diet is on hold and we’re having Apple Pie for dinner. It’s fruit right???
