This is a curry I make for friends that aren’t used to a traditional Thai curry. It’s a crowd pleaser 😌.
About the recipe: I’m getting lots of comments about the recipe for the duck curry. I cook by taste..my curry paste is always different measurements depending on how much I need. It’s just how I cook, none of my Thai family keep recipes, it’s just how I’ve learnt. I love sharing recipes when I get the time to write as I’m cooking. I’m working on writing the recipes down as I go in the future. I have a newborn and a toddler so just threw this together within an hour for a last minute guest. However, if you have a favourite thai red curry paste I can give you a rough idea of what I did. I used a cups worth of my homemade paste, 1 cup of coconut milk, 1/2 coconut cream, 1x bunch of Chinese broccoli, 1x red capsicum, half can lychee and the syrup it’s in, 4x roasted duck breast. I added in some fish sauce and a pinch of palm sugar towards the end
