Ingredients
For Rice:
- 2 cups basmati rice
- 3-4 cups water
- 1 teaspoon salt
- 1 tablespoon oil
For Pulao:
- 3 tablespoons ghee or oil
- 1 medium onion, thinly sliced
- 2-3 green chilies (adjust to taste)
- 1 teaspoon cumin seeds
- 4-5 cloves
- 2-3 green cardamoms
- 1-inch cinnamon stick
- 1 bay leaf
- 1 teaspoon ginger-garlic paste
- 1 medium tomato, chopped
- 2 cups mixed vegetables (carrots, peas, beans, etc.)
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder

Instructions
1. Prepare the Rice
- Rinse the rice thoroughly and soak it in water for 20-30 minutes.
- In a pot, boil water with salt and a drizzle of oil. Add the soaked rice and cook until it’s 70-80% done. Drain and set aside.
2. Prepare the Masala Base
- Heat ghee or oil in a large pan. Add cumin seeds, cloves, cardamoms, cinnamon, and bay leaf. Sauté until aromatic.
