Pulao is a fragrant and flavorful rice dish that’s easy to make and perfect for any occasion. Here’s a simple yet delicious recipe to prepare pulao at home.

Ingredients

For Rice:

  • 2 cups basmati rice
  • 3-4 cups water
  • 1 teaspoon salt
  • 1 tablespoon oil

For Pulao:

  • 3 tablespoons ghee or oil
  • 1 medium onion, thinly sliced
  • 2-3 green chilies (adjust to taste)
  • 1 teaspoon cumin seeds
  • 4-5 cloves
  • 2-3 green cardamoms
  • 1-inch cinnamon stick
  • 1 bay leaf
  • 1 teaspoon ginger-garlic paste
  • 1 medium tomato, chopped
  • 2 cups mixed vegetables (carrots, peas, beans, etc.)
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh cilantro and mint leaves for garnish

Instructions

1. Prepare the Rice

  • Rinse the rice thoroughly and soak it in water for 20-30 minutes.
  • In a pot, boil water with salt and a drizzle of oil. Add the soaked rice and cook until it’s 70-80% done. Drain and set aside.

2. Prepare the Masala Base

  • Heat ghee or oil in a large pan. Add cumin seeds, cloves, cardamoms, cinnamon, and bay leaf. Sauté until aromatic.
  • Add the sliced onions and green chilies. Cook until the onions turn golden brown.
  • Stir in ginger-garlic paste and cook for another minute.
  • Add chopped tomatoes and cook until they soften.

3. Cook the Vegetables

  • Add mixed vegetables, turmeric, garam masala, and coriander powder. Sauté for 5-7 minutes, until the vegetables are slightly tender.
