Ingredients:
*1 lb chicken, cut into bite-sized pieces
*2 cups basmati rice
*2 onions, thinly sliced
*2 tomatoes, chopped
*1 tbsp ginger paste
*1 tbsp garlic paste
*1 tsp cumin seeds
*1 tsp coriander powder
*1 tsp garam masala powder
*1 tsp turmeric powder
*1/2 tsp red chili powder
*2 bay leaves
*4 green cardamom pods
*2 black cardamom pods
*2 cinnamon sticks
*4 cloves
*1/4 cup chopped fresh cilantro leaves
*1/4 cup chopped fresh mint leaves
*1/4 cup ghee or vegetable oil
*Salt to taste
*4 cups water
Instructions:
Rinse the basmati rice in cold water until the water runs clear. Soak the rice in enough water to cover it for 30 minutes.
In a large pot or Dutch oven, heat the ghee or vegetable oil over medium-high heat. Add the cumin seeds, bay leaves, cardamom pods, cinnamon sticks, and cloves. Cook until fragrant, about 1 minute.
Add the sliced onions and cook until they are golden brown, stirring frequently.
Add the chicken pieces and cook until they are browned on all sides.
Add the ginger paste and garlic paste, and cook for 1-2 minutes, stirring constantly.
Add the chopped tomatoes and cook until they are softened.
Add the coriander powder, garam masala powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes, stirring constantly.
Drain the soaked rice and add it to the pot with the chicken mixture. Stir gently to combine.
Add the chopped cilantro leaves and mint leaves, and pour in 4 cups of water.
Bring the mixture to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 20-25 minutes, or until the rice is tender and the water has been absorbed.
Remove the pot from the heat and let it sit, covered, for 10-15 minutes.
Fluff the rice with a fork and serve hot.
Your delicious homemade chicken biryani is now ready to serve!
