How to Make Creamy Mushroom Soup from Scratch
Ingredients:
- 1 pound of fresh mushrooms
- 2 tablespoons of butter
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Fresh thyme or parsley for garnish
Instructions:
- Clean and slice the mushrooms.
- In a large pot, melt the butter over medium heat. Add chopped onions and garlic, sauté until soft.
- Add the mushrooms and cook until they release their moisture and brown slightly.
- Pour in the broth and bring to a boil. Simmer for 15-20 minutes.
- Using an immersion blender or regular blender, puree the soup until smooth.
- Return the soup to the pot, add heavy cream, and season with salt and pepper. Simmer for an additional 10 minutes.
- Serve hot, garnished with fresh thyme or parsley.
Tips and Variations:
For a richer flavor, you can add a splash of white wine while sautéing the mushrooms. You can also experiment with different mushroom varieties for a unique taste.
