How to Make Creamy Mushroom Soup from Scratch



Ingredients:



  • 1 pound of fresh mushrooms

  • 2 tablespoons of butter

  • 1 small onion, finely chopped

  • 2 cloves of garlic, minced

  • 4 cups of chicken or vegetable broth

  • 1 cup of heavy cream

  • Salt and pepper to taste

  • Fresh thyme or parsley for garnish



Instructions:



  1. Clean and slice the mushrooms.

  2. In a large pot, melt the butter over medium heat. Add chopped onions and garlic, sauté until soft.

  3. Add the mushrooms and cook until they release their moisture and brown slightly.

  4. Pour in the broth and bring to a boil. Simmer for 15-20 minutes.

  5. Using an immersion blender or regular blender, puree the soup until smooth.

  6. Return the soup to the pot, add heavy cream, and season with salt and pepper. Simmer for an additional 10 minutes.

  7. Serve hot, garnished with fresh thyme or parsley.



Tips and Variations:


For a richer flavor, you can add a splash of white wine while sautéing the mushrooms. You can also experiment with different mushroom varieties for a unique taste.
