Dakdoritang (a.k.a. Dakbokkeumtang)

If I have to pick a Korean food for winter season, it is spicy braised chicken without any hesitation. I grew up eating it because this was my favorite dish of my mom’s.

After becoming a professional chef, I didn’t get to make this for my own but my memories of Korean braised chicken was always filled with warmth, love, and celebration. When I came back to Korea for visiting from my schools in the States, I asked for the braised chicken. When I was out for a vacation from the military service in Korea, I asked for the same braised chicken and every time my mom prepared this, it always tasted the same with a special ingredient, love.

Now, it is not the same recipe, and I am pretty damn sure that mine tastes better cause I cook for living lol. However, there will always be something missing… probably until I cook for my kids.
