### Homemade Tomato Ketchup Recipe

Ingredients:

  • 2 pounds ripe tomatoes (or 1 can of crushed tomatoes)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon ground mustard
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions:

  1. Prepare the Tomatoes:

    • If using fresh tomatoes, blanch them in boiling water for about 30 seconds, then transfer to ice water. Peel the skins off and chop the tomatoes.
  2. Cook the Ingredients:

    • In a large pot, combine the chopped tomatoes, onion, and garlic. Cook over medium heat for about 15-20 minutes until the tomatoes break down and the mixture becomes soft.
  3. Blend:

    • Use an immersion blender (or transfer to a blender) to puree the mixture until smooth.

  1. Add Seasonings:

    • Stir in the apple cider vinegar, brown sugar, granulated sugar, salt, mustard, allspice, cinnamon, cloves, and cayenne pepper. Mix well.
  2. Simmer:

    • Reduce heat to low and let the ketchup simmer uncovered for about 45 minutes to an hour, stirring occasionally. The ketchup should thicken to your desired consistency.

  1. Cool and Store:
    • Once thickened, remove from heat and let cool. Transfer the ketchup to sterilized glass jars or bottles and refrigerate.

Tips:

  • Adjust the sweetness or spices to suit your taste.
  • This ketchup will keep in the fridge for about 3 weeks. You can also can it for longer storage.
