Ingredients:
- 2 pounds ripe tomatoes (or 1 can of crushed tomatoes)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 cup apple cider vinegar
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1 teaspoon ground mustard
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cayenne pepper (optional, for heat)
Instructions:
Prepare the Tomatoes:
- If using fresh tomatoes, blanch them in boiling water for about 30 seconds, then transfer to ice water. Peel the skins off and chop the tomatoes.
Cook the Ingredients:
- In a large pot, combine the chopped tomatoes, onion, and garlic. Cook over medium heat for about 15-20 minutes until the tomatoes break down and the mixture becomes soft.
Blend:
- Use an immersion blender (or transfer to a blender) to puree the mixture until smooth.
Add Seasonings:
- Stir in the apple cider vinegar, brown sugar, granulated sugar, salt, mustard, allspice, cinnamon, cloves, and cayenne pepper. Mix well.
Simmer:
- Reduce heat to low and let the ketchup simmer uncovered for about 45 minutes to an hour, stirring occasionally. The ketchup should thicken to your desired consistency.
- Cool and Store:
- Once thickened, remove from heat and let cool. Transfer the ketchup to sterilized glass jars or bottles and refrigerate.
Tips:
- Adjust the sweetness or spices to suit your taste.
- This ketchup will keep in the fridge for about 3 weeks. You can also can it for longer storage.
