Jollof rice is a popular West African dish known for its vibrant colors and rich flavorsand here are simple guide on how to prepare it

Ingredients:
2 cups long-grain parboiled rice
1 onion, finely chopped
3 ripe tomatoes, blended
1 bell pepper, chopped
1 habanero pepper (optional, for heat)
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup chicken or vegetable broth
1 teaspoon thyme
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried basil
Salt and pepper to taste
3 tablespoons vegetable oil

Instructions:

  1. Prepare the Ingredients: Rinse the rice under cold water until the water runs clear and chop the onion and bell pepper, and also habanero pepper and Blend the tomatoes until smooth.

  2. Sauté the Aromatics: Heat the vegetable oil in a large pot over medium heat and add the chopped onion and garlic, and sauté and after about 3-4 minutes and proceed to the next step.

  3. Add the Blended Tomatoes: Pour in the blended tomatoes and cook, stirring occasionally, until the tomato mixture reduces and thickens, about 8-10 minutes.

  4. Season the Sauce: Stir in the tomato paste, thyme, curry powder, paprika, dried thyme, dried basil, salt, and pepper and allow the flavors to meld together for another 2-3 minutes.

  5. Add the Rice: Add the rinsed rice to the pot, stirring to coat it evenly with the tomato mixture.

  6. Pour in the Broth: Pour in the chicken or vegetable broth, ensuring that the rice is submerged in the liquid and if needed, add more water or broth to cover the rice.

  7. Simmer and Cook: Bring the pot to a gentle boil and then reduce the heat to low, cover the pot with a tight-fitting lid and simmer for about 20-25 minutes and until the rice is tender and cooked and done.

  8. Fluff and Serve: Once the rice is cooked, fluff it with a fork to separate the grains and serve the Jollof rice hot, garnished with chopped fresh parsley or cilantro, if desired.
